Vegan Pecan Pie Brownies

These Vegan Pecan Pie Brownies are the perfect marriage of decadent, fudgy brownies and chewy, sweet pecan pie filling. This dish is great for Friendsgiving, Thanksgiving, or just a good old Saturday afternoon of baking. Dig in, you won’t even believe they’re vegan.

Ingredients

Brownies

4 oz Bixby Bittersweet Chocolate Baking Chips

1 ½ cup sugar

1 ½ cup all purpose flour

10 tbsp water

5 tbsp unsalted vegan butter

4 tbsp flaxseed meal

1 tsp vanilla extract

1 tsp baking powder

¼ tsp salt

Pecan Pie Topping

2 cups pecan halves

½ cup brown sugar

⅓ cup maple syrup

3 tbsp water

2 tbsp flaxseed meal

2 tbsp vegan butter

2 tsp vanilla extract


Directions:

  1. Preheat the oven to 350 Fahrenheit. Prepare brownies. In a small mixing bowl, whisk together 4 tbsp of flaxseed meal and 10 tbsp of water. Set aside for 5 minutes to thicken into a goo. Add 5 tbsp of vegan butter and bittersweet chocolate to a microwave safe bowl. Microwave, stirring every 15 seconds until completely melted, about 45 seconds total.
  2. In a large mixing bowl, add flaxseed meal mixture, melted chocolate mixture, and vanilla extract and stir until smooth. In a separate bowl, combine flour, sugar, salt, and baking powder until combined. Combine the wet and dry mixtures until a batter is just combined.
  3. Pour the batter into a 9x13 baking dish and bake for 15-20 minutes, or until just barely set, but not completely baked through.
  4. While the brownies are baking, combine the remaining 2 tbsp flax and 3 tbsp of water. Set aside to thicken for five minutes. Add the remaining 2 tbsp of vegan butter to a small microwave safe bowl and microwave until melted, about 10-15 seconds. In a mixing bowl, combine the flax egg, melted vegan butter, brown sugar, maple syrup, and vanilla extract. Stir until smooth. Fold in the pecans.
  5. Once the brownies are partially baked, pour the pecan topping evenly over the brownies. Gently spread the filling to cover the whole pan. Return the brownies to the oven, and continue baking for an additional 25 minutes, or until the pecan topping is sticky and gooey, and no longer wet and runny.
  6. Remove from the oven and allow to cool for 15 minutes before slicing and serving!
