1 large egg
1 stick unsalted butter, melted
5 oz Bixby Semisweet Chocolate Baking Chips
1 ½ cup all purpose flour
1 cup brown sugar
1 cup pumpkin puree
½ cup roasted pecans, chopped
2 tsp pumpkin pie spice
1 tsp vanilla extract
1 tsp baking powder
½ tsp cinnamon
- Preheat the oven to 350 Fahrenheit. In a small microwave safe bowl, melt the butter for 10-20 seconds at a time until just melted.
- In a large mixing bowl, combine egg, melted butter, brown sugar, pumpkin puree, and vanilla extract. Mix with a rubber spatula until smooth.
- Add flour, baking powder, pumpkin pie spice, and cinnamon. Stir until completely combined. Roughly chop the baking chocolate and pecans and fold into the batter until distributed.
- Transfer to a greased or parchment lined 8x8 inch baking dish. Bake for 35-40 minutes, or until a toothpick inserted comes out clean. Slice into 9 squares and enjoy.
