Ingredients
Brownies
4 large eggs
4 oz Bixby Bittersweet Chocolate Baking Chips
1 ½ cup sugar
1 ½ cup all purpose flour
5 tbsp unsalted butter
1 tsp vanilla extract
1 tsp baking powder
¼ tsp salt
Filling
3 large egg yolks
1 1/2 cup sweetened shredded coconut
1 1/2 cup roasted and salted pecans
1 cup evaporated milk
¾ cup brown sugar
4 tbsp salted butter, room temperature
1 tsp vanilla extract
¼ tsp sea salt
Directions:
- Preheat the oven to 350 Fahrenheit. Prepare brownies. Add 5 tablespoons of butter and bittersweet chocolate to a microwave safe bowl. Microwave, stirring every 15 seconds until completely melted, about 45 seconds total.
- In a large mixing bowl, whisk together eggs, sugar, and vanilla until the sugar is dissolved and the mixture is lighter in color. Whisk in melted chocolate mixture and stir until smooth. In a separate bowl, sift together flour, salt, and baking powder. Combine the wet and dry mixtures until a batter is just combined.
- Pour the batter into a 9x9 inch baking dish lined with parchment paper and bake for 25-30 minutes, or until a toothpick comes out mostly clean. When the brownies are done, allow them to cool completely.
- Add evaporated milk, egg yolks, brown sugar, and salt to a pot over medium heat. Stirring continuously, until the mixture has thickened to the texture of a thin pudding, about 5-7 minutes.
- Remove from the heat, and add butter and vanilla and stir until the butter has melted.
- Roughly chop the pecans, and add them to a large mixing bowl with the coconut. Add the condensed milk custard and stir until the pecans and coconut are well-distributed.
- Once the brownies are cooled, top with the coconut and pecan topping and chill in the refrigerator for at least 30 minutes, or until set. Cut into squares and enjoy!
