These Blueberry Breakfast Cookies are loaded with nourishing ingredients to fuel your morning. Dried blueberries, chopped walnuts, flaxseed meal, cacao nibs, chia seeds, oh my! These cookies are perfect for a grab-and-go breakfast or a mid-afternoon pick-me-up.
Ingredients
1 medium banana
1 ½ cup rolled oats
¾ cup dried blueberries
½ cup whole wheat flour
½ cup chopped walnuts
⅓ cup maple syrup
¼ cup flaxseed meal
3 tbsp Bixby Cacao Nibs
3 tbsp coconut oil, melted
2 tbsp chia seeds
1 tsp cinnamon
¼ tsp nutmeg
Directions:
- Preheat the oven to 350°F. In a large mixing bowl, mash the banana until smooth. Add maple syrup and coconut oil and mix until well combined.
- Fold in rolled oats, dried blueberries, whole wheat flour, walnuts, flaxseed meal, cacao nibs, chia seeds, cinnamon, and nutmeg. Stir until a stick dough forms.
- With lightly oiled hands, form the dough into 12 cookies about ¼ cup each. Gently press to flatten and place on a baking sheet lined with parchment paper. Bake for 15-18 minutes, or until the cooked are lightly toasted and golden. Allow to cool before serving, and enjoy within 5 days!
