2 cups chocolate ice cream
¼ cup strong coffee or espresso
¼ cup whole milk
2 oz bittersweet chocolate baking chips
½ cup heavy whipping cream
2 tbsp sugar
1 tbsp cacao nibs
Optional Chocolate Topping
¼ cup chocolate baking chips
¼ cup coconut oil
Add the heavy whipping cream and sugar to a large bowl. Using an electric mixer, whip the heavy cream until it reaches soft peaks.
Optional: Prepare the chocolate topping. Add the coconut oil and chocolate baking chips to a microwave safe bowl. Microwave on high for 10-15 seconds at a time, stirring frequently, until completely melted.
Add chocolate ice cream, coffee, milk, and chocolate baking chips to a high powered blender. Blend until smooth and creamy.
