Cocoa Nib Vinaigrette
Makes about 3/4 cup of salad dressing
1 TBS minced shallot
2 TBS aged balsamic vinegar
2 1 /2 TBS Bixby cocoa nibs
1 /2 cup olive oil
1 TBS honey
1/4 tsp. freshly ground black pepper
1 /8 tsp. salt
Place the shallots, vinegar and cocoa nibs in a blender. Turn the blender on low and slowly add the olive oil in a thin stream until all oil is added and dressing is emulsified. Add the honey, pepper and salt and blend just until combined. Use as a dressing on your favorite salad greens.
We love this vinaigrette on mixed greens with sliced
strawberries and feta cheese.
