We source directly from farming partners in Belize who cultivate cacao with respect for both the land and their communities. These beans are then transformed in our Rockland, Maine facility using traditional bean-to-bar methods—roasting, winnowing, grinding, and refining in small batches to preserve the unique flavor characteristics that make Belizean cacao special.
The result is a chocolate bar that's fruity and approachable while maintaining the depth and richness you expect from a 70% dark chocolate. It's a true taste of origin—transparent, traceable, and delicious.
Some contend that Belize is the "Cradle of Chocolate." There is ample anthropological evidence that the Mayan civilization consumed drinking chocolate over 2600 years ago. Today's Belize beans are grown by over 350 certified organic smallholder cacao farming families in the Toledo district, most of them indigenous Q'eqchi' and Mopan Maya. These growers are supported by Maya Mountain Cacao, a direct trade source founded in 2010, which operates a 24-hectare demonstration farm for research and training in best practices for increasing cacao yield and quality.

Kept it in my chair, made it last for days, and savored every bite. It did have hints of berry. Imagine that.

The Belize Dark Chocolate had wonderful notes of raisins, and was smooth and delicious. We bought a few different ones - this was our favorite.

My fiance and I tried Belize, Haitian and Guatemalan 70% bars. My favorite was the Belize. 2nd was Haitian. My fiance's favorite was Haitian, 2nd Guatemalan. And, yes, we are still planning on getting married even though we don't agree! :)
It’s similar to wine tasting: the chocolates from Bixby & Co. have their own distinctive place of origin nuances — each country’s chocolate has its own subtle warmth and sweetness which makes them fun to taste. All are delicious!
